Ryan made lunch today using what we had in the fridge. This was great and so quick and easy. It takes the george foreman grill or another type of quesadilla press. We'll be making this again for sure!
Ingredients:
3 Whole Wheat Tortillas
Shredded Cheese - 6oz.
Purdue Chicken Short Cuts -6oz.
Olive Oil Spray or 1 tbsp. of margarine
1 cup of salsa
Directions:
Spritz 1 tortilla with olive oil spray or lightly coat with margarine. On the non-greased side, fill 1/2 of the tortilla with 2 oz. of chicken and 2 oz. of shredded cheese. Fold over in half and place on grill. Grill in press for about 3-4 minutes until cheese is melted through. Serve with salsa. YUM!
*My serving was 1 tortilla and Ryan's was 2*
