Easy Shrimp Scampi

Very easy and SO good.  This brought me back to the days of Olive Garden - but a MUCH healthier version. 
It looks heavy on the peas, but I promise - it's not.

Ingredients:
1 lb. frozen fully cooked shrimp (wait for this to go on sale at the grocery store, it's usually BOGO Free on sale)
1/4 cup margarine
1/4 cup extra virgin olive oil
3 tsp. of pre-packaged minced garlic (the jarred stuff that I use) or 4 cloves of garlic, minced
1 yellow onion, diced (I use the 8oz. pre-chopped onion from the store - SO easy)
2 Tbsp. Lemon Juice
2 Tbsp. light honey dijon salad dressing
1 cup frozen baby peas (I used the steamer kind, it worked well)
3 cups of hot cooked rice (I used 1 package of uncle ben's and 1 cup of the minute brown rice)

Directions:
Thaw shrimp according to package directions - remove tails if necessary.  Drain well and set aside.
In large saucepan combine margarine and olive oil and heat until foaming.  Add garlic and onion and saute, stirring frequently, until tender.  Add shrimp and stir well.  Cover and simmer for 1-2 minutes until shrimp are thoroughly heated.
Remove cover and add lemon juice, salad dressing and peas.  Cook and stir until everything is heated and blended.
Serve over hot rice.
