Turkey and Herb Stuffing Bake

Oh my gosh, this meal is AMAZING!  It's very easy and just as good the next day warmed up.  This is using the Purdue short cuts, carved turkey breast.  If you have chicken instead of turkey, I think it would still work.

Ingredients:
1 package of Perdue Short Cuts Carved Turkey Breast, oven roasted 9oz. - chop to small piece
1 box of whole wheat stove top stuffing mix
1 1/4 cup water, bring to a boil
8 oz. frozen broccoli, chopped into bite size pieces (I used the steamer box from Green Giant - had a great sale at the grocery store last week)
3/4 cup peas (we used the left overs from the shrimp scampi earlier in the week, more than 3/4 cup would work)
1 can (10.75oz) condensed 98% fat free cream of chicken soup

Directions:
Preheat oven to 400 degrees.  Combine contents of stuffing box with boiling water in  2qt. bowl until well blended.  Stir in turkey pieces, cooked broccoli, peas and soup.  mix all together.  Cover and bake in 400 degree oven for 20 minutes. Uncover and bake an additional 10 minutes until heated through.

We had ours with light, whole wheat english muffins.  100 calories a piece, 50 for a half of one : )
